Spelt bread – authentic taste and health benefits

Simple sourdough bread recipe made from black flour and whole spelt
Ingredients:
- 500 g whole wheat spelt flour
- 500 g black flour
- 200 g natural active yeast
- 20g salt
- Water (approximately 700–800 ml, depending on how much the flour “requires”)
Preparation method:
Flour mixture:
In a large bowl, mix the black flour with the whole spelt flour, in a 1:1 ratio.

Adding ingredients:
Over the flour, add the yeast, salt, and water – gradually adding until the dough becomes homogeneous, elastic, and sticky, but not wet.

Kneading:
Knead well until the dough is smooth. There is no need to knead intensely – just enough to bind.

Leavening:
Let the dough rise for 1 and a half hours in a warm place, covered with a towel.

Forming the bread:
After rising, we shape the dough – either one large loaf or two smaller ones – and place it in suitable trays.

Baking:
Cover and place in the preheated oven. Bake for approximately 45 minutes at 220°C.
We check the crust and the hollow sound to the touch to verify that it is well baked.
The result? A dense, nutritious bread that stays fresh for days.
