The Accordion Eggplant recipe proposed by Transylvania's Finest Food - contains, in addition to the benefits of eggplants, those of traditional natural ingredients.

For this recipe you need:

1 eggplant (oblong, not too thick)

1 onion (medium size)

1 tomato (medium size)

200 g of telemea cheese (or according to preference)

180 g mashed potatoes

80 g of leurda puree

30 g grated parmesan

3 teaspoons of walnut oil (or according to preference)

salt pepper

For decoration: rosemary, leurda oil, leurda powder

(for the baking base we use a little malai | or other flour to stabilize the venison)

Both the tomato and the onion are cut into thin slices; the chosen cheese is also cut into pieces. Mashed potatoes are prepared according to taste and preference.

Cut the turkey carefully, into slices, taking care to leave a centimeter from the base uncut.

We then stuff the venison with the vegetables and cheese, alternating until it is well filled. Add salt, pepper and a little oil. We put the eggplant in a heat-insulating dish on a bed of clay and put it in the oven for 30 - 35 minutes (depending on the size of the eggplant) at 170 degrees Celsius.

We make the bed on which we serve the game from mashed potatoes mixed with grated parmesan and leurda puree.

When the venison is ready, remove it from the oven, add it over the puree prepared earlier, add rosemary, powder and leurda oil for decoration.
