Familiar flavors and foods are comforting most of the time. We chose to reinterpret in a traditional way, the famous Japanese sushi recipe with local ingredients and above all available to anyone. But before we go into detail about how we reinvented the well-known sushi recipe, we bring to the fore some curiosities and benefits of the much-loved and versatile preparation:

Curiosities about SUSHI

  • If you love sushi, you probably already know, if not, find out that in fact, although it is considered to be a Japanese specialty, it seems that this kind of food was invented in China around the 4th century BC.
  • If you like to eat sushi with wasabi, you should know that most of the wasabi served outside of Japan is a mixture of horseradish, mustard and food coloring.
  • The green horseradish (Wasabia japonica) is a demanding plant when it comes to growing conditions; and that is precisely why it cannot be cultivated on an industrial scale. For this reason, wasabi growers cannot meet market demands, which turns real wasabi into a rare and expensive product.
  • The prized salmon was not used by the Japanese in the preparation of sushi until after 1980, inspired by the Norwegians.
  • According to Japanese traditions, only men are allowed to cook sushi. It is assumed that women have a higher body temperature; and this fact, according to the Japanese, can negatively affect the sushi cooking process.
  • The Japanese rarely eat sushi in restaurants located far from the coast, because an authentic sushi can only be prepared near the sea | ocean for the flavor given by the freshness of the fish | seafood.

Therefore, we propose to replace the well-known ingredients of the Japanese recipe with local ingredients.

… used:

100 g rice (pilaf)

50 g sliced ​​zucchini

50 g cucumber slices

70 g of smoked trout

25 g horseradish paste

red pepper or capia

pickled green peppercorns

honey infused with chilli

wild garlic powder

fried eggplant skin

 

Method of preparation

Rice can be prepared, simply, according to the classic method, adding 1 part rice to 2 parts water, but we guarantee that pilaf can also be used, if there is a portion left over from the previous meal.
... what should also be mentioned is that although it is recommended to use special sushi rice for this dish, because it contains more starch, the product turns out to be incredibly tasty even if you use plain rice. 

The cucumber, which is usually found inside, was used outside to replace the Nori sheet, along with the zucchini.

For slicing the zucchini and cucumber, the vegetable cleaner is used, then the slats are placed one on top of the other (in half) to form a base, which replaces the Nori sheet.
Under the vegetables, for twisting, put a food foil; we know that the net of bamboo sticks is recommended for rolling, but we guarantee that it only works with food foil. 😊
On top of the vegetables - the rice (pilaf) spread in a thin layer, then the horseradish sauce and pieces of smoked trout were added.

It can be used as a filling: carrot, mango, avocado, any texture of the ingredients according to preference; for Sushi Transilvania, red pepper (cut into sticks) was chosen.

It is rolled tightly; and leave for a few minutes.

Thin strips are cut from the cucumber that will help bind the small dishes.

After removing the foil, portion the roll according to preference - with the help of a well-sharpened knife.

... then each "maki" is tied with the slices of cucumber cut earlier.

As a decoration, but also for flavors, wild garlig powder, pickled green peppercorns and chili-infused honey were added to the Sushi de Transylvania.

Optionally, fried eggplant skins can be used for decoration.
